Recipe for Baked Feta Cheese - from A Single Girl's Guide to Greece

Recipe for Baked Feta Cheese with Tomatoes (gluten free)

3/4 cup cherry tomatoes, halved
1/4 cup pitted and chopped Kalmata olives (optional). I used canned, sliced olives in this photo for convenience
1 large canned artichoke heart, quartered (optional)
1/4 cup thinly sliced green pepper (optional)
1 tsp olive oil
1 tsp dried oregano
Pinch of ground black pepper
1-8 oz block feta

1 Tbsp fresh, chopped parsley

Lemon wedges (optional)


Directions

Preheat oven to 400F
Mix together tomatoes, olives, artichoke heart, pepper, olive oil, oregano, and black pepper. 

Arrange feta in an oven safe dish (I used a clay baking dish for this photo shoot). Arrange tomato mix over top. Bake feta for 15 minutes. It will be softened, but not melted. 

Garnish with fresh parsley and lemon wedges. Serve with crackers, tortillas, or bread. Leftovers can be refrigerated.

* Feta will get hard again when chilled. It can be reheated in the microwave or oven to soften.
